Opened on December 18, this new cheese dairy located on the Marigot Sea Front is held by Géraud, fervently passionate about his refined products.
Installed in Saint-Martin since March 2021 and after several stays on the island, the reconverted former banker realized the absence of cheese dairy on the territory when the asset of the French part is above all gastronomy, good wines... and now, good cheeses. Originally from Cantal where farms and cheese producers are legion, Géraud followed his desire to convert to this craft with ancestral know-how. With a condensed training, internships in cheese dairies and numerous readings and personal research, Géraud left Toulouse taking a suitcase full of cheeses, approaching the restaurants of Saint-Martin to have his products tasted only from small producers or small cheese factories. Goat, cow, sheep, buffalo, almost a hundred cheeses made with raw milk are offered at the Comptoir des Fromages. Hard or soft cheese, flowery or pressed, rather mild or stronger, each natural product is a unique taste experience and Géraud's advice has a lot to do with it.
Wishing to offer tasting workshops in the shop whereas he had until now carried out them privately on yachts or in villas, the cheese maker has surrounded himself with a local apprentice in training in order to maintain an openness 6 days out of 7 in the store while developing related activities. Tasting workshops are already open for registration via Trip Advisor in the form of two packages, the first of 1h15 with tasting of 5 cheeses and 2 wines and the second with 8 to 9 cheeses and 4 different wines including the longer duration will allow Géraud to give many explanations on the history of cheese, on its manufacture or its way of tasting it, without forgetting many anecdotes of which the fine connoisseur has the secret. _VX
