Caribbean Flavors: discovering Caribbean cuisine

The many Caribbean specialties - presented on a dozen stands last Friday and Saturday during the Billfish fishing tournament - were particularly appreciated by visitors to the village, at the Fort Louis marina. Nicole Piper, the organizer of this first successful edition of the Caribbean Flavors “Grill & pot food festival”, was proud to (re) discover these delicious dishes: “This cuisine is the one that existed in the days of our grandmothers. Each stand had its own specialty and a very specific menu, for example that of Quartiers d'Orléans offered cod, Sandy Ground donkey meat, Rambaud pork, and Dominique soup including callaloo. ”
